Oxalic acid is an organic substance with the chemical formula C2H2O4, a metabolic product of living organisms, a weak dibasic acid, widely distributed in plants, animals and fungi, and performing different functions in different living organisms. Studies have found that more than 100 species of plants are rich in oxalic acid, especially spinach, amaranth, beet, horsetail, taro, sweet potato and rhubarb. Oxalic acid is often considered to be an antagonist in the absorption and utilisation of mineral elements, as it reduces the bioavailability of mineral elements and in the human body it easily forms calcium oxalate with calcium ions leading to kidney stones. Its acid anhydride is carbon trioxide.
